Cinnamon Swirl Cake

Ingredients

For the batter:

  • 2 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 1/4 cups vanilla ice cream, melted
  • 2 large eggs
  • 1/4 cup butter, melted
  • milk, optional, to taste

For the cinnamon swirl:

  • 1/3 cup butter, softened
  • 1/3 cup brown sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons cinnamon

For the glaze:

  • 1 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, add 2 3/4 cups of the flour, the granulated sugar, the baking powder, and 1/4 teaspoon of the salt and mix together.

Step 4 –Make a well in the middle of the flour mixture.

Step 5 –Add the melted ice cream, the eggs, and 1/4 cup of the melted butter and stir until smooth and thick, but easy to stir. Add 1-2 tablespoons of the extra milk at a time, if needed, until the batter is thinner and reaches the desired consistency.

Step 6 –In a small bowl, combine the remaining softened butter, the brown sugar, the remaining flour, and the cinnamon.

Step 7 –Spread the batter evenly into the prepared baking dish.

Step 8 –Dollop the cinnamon mixture by the tablespoonful over the batter, then run a butter knife through it to create a swirl effect.

Step 9 –Bake the cake until a toothpick inserted into the middle comes out clean, about 25-30 minutes.

Step 10 –While the cake is baking, add the powdered sugar in a bowl with the remaining 1/4 cup of the milk, the vanilla, and the remaining salt and whisk until smooth.

Step 11 –Let the cake cool for 10 minutes.

Step 12 –Pour the glaze over the cake while it is still warm.

Step 13 –Slice and serve.
