Ingredients

  • 4 (8-ounce) chicken breasts, boneless and skinless
  • salt, to taste
  • pepper, to taste
  • taco seasoning, to taste
  • cooking oil, to taste
  • 1 1/2 cups jarred salsa
  • 1 cup cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Season the chicken on both sides with the salt, the pepper, and the taco seasoning. If the taco seasoning contains salt, make sure you adjust the salt accordingly.

Step 3 –In a large, oven-safe skillet over medium-high heat, add the cooking oil.

Step 4 –Add the chicken breasts to the hot oil and cook until they are well-browned on both sides, about 3-4 minutes per side.

Step 5 –Transfer the pan from the heat.

Step 6 –Pour the salsa evenly over top of the chicken.

Step 7 –Bake the chicken breasts until they reach an internal temperature of 150 degrees F, about 15-25 minutes. They will not be fully cooked.

Step 8 –Sprinkle the chicken-salsa mixture with the cheese.

Step 9 –Bake until the cheese is melted and the chicken breasts reach an internal temperature of 165 degrees F, about 5-10 minutes.

Step 10 –Allow the chicken to rest for 5 minutes.

Step 11 –Serve.
