Ingredients

  • 1/2 cup old-fashioned oats
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup unsalted butter, melted
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 2 large eggs
  • 3 cups chocolate chips
  • 1 1/2 cups walnuts, chopped

Directions

Step 1 –Line a cookie sheet with parchment paper or a silicone baking mat.

Step 2 –Place the oats in a small food processor or blender and grind until they are powdery.

Step 3 –Place the ground oats in a medium-sized bowl.

Step 4 –Whisk the flour, the baking soda, the salt, and the cinnamon into the ground oats.

Step 5 –In another bowl, stir the melted butter, the brown sugar, and the granulated sugar until smooth.

Step 6 –Stir the vanilla, the lemon juice, and the eggs into the butter mixture until smooth.

Step 7 –Stir the butter mixture into the flour mixture until only slightly lumpy.

Step 8 –Stir the chocolate chips and the walnuts into the batter.

Step 9 –Scoop 1/4-cup-sized drops of the dough, form them into balls, and place them on the prepared baking sheet.

Step 10 –Cover the cookies well with plastic wrap and chill for at least 4 hours and up to overnight.

Step 11 –Preheat the oven to 350 degrees F.

Step 12 –Place the cookies on a cookie sheet lined with parchment paper or silicone baking mats, giving them enough space to expand during baking.

Step 13 –Slightly press each dough ball with your palm.

Step 14 –Bake until the cookies are just slightly underdone, about 13-17 minutes.

Step 15 –Serve.
