Corn Chip Salad

If you’ve run out of tortillas, but still have all the taco toppings, Corn Chip Salad is here for the rescue! Grab a big bowl, add some fresh lettuce and then pile it up! Throw on the slightly spicy taco meat, the sweet corn, the juicy tomatoes, the salty cheese, and some sweet Catalina dressing and give it a toss. Serve it up with a sprinkle of crunchy corn chips and you’ve created a meal better than you could have ever imagined. So, don’t sweat it! Your tortilla tragedy was reconciled (dare we say, made even better?!) with this Corn Chip Salad! Yahoo!

Ingredients

  • 1 pound lean ground beef
  • 1 (1-ounce) package taco seasoning
  • 8 cups romaine or iceberg lettuce, chopped
  • 1 cup corn
  • 2 tomatoes, chopped
  • 1 1/2 cups cheese, such as cheddar, shredded
  • Catalina dressing, to taste
  • 2 cups corn chips

Directions

Step 1 –In a skillet over medium heat, add the ground beef and cook, while crumbling, until it is no longer pink. Drain the excess grease.

Step 2 –Add the taco seasoning to the beef and cook, while stirring, until it has thickened.

Step 3 –Transfer the beef from the heat.

Step 4 –In a large bowl, add the lettuce, the cooked beef, the corn, the tomatoes, the cheese, and the dressing and toss to coat.

Step 5 –Serve the salad topped with the corn chips.
