Ingredients

  • 12 corn tortillas, cut into strips
  • 12 ounces chorizo, cooked and drained
  • 1 cup Mexican blend cheese, shredded
  • 3 green onions, chopped
  • 4 ounces red pimientos, diced and drained
  • 8 large eggs, beaten until frothy

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Spray a 7×11-inch baking dish with nonstick cooking spray and set it aside.

Step 3 -Combine the tortilla strips, the chorizo, the cheese, the onions, the pimientos, and the eggs in the prepared baking dish, spreading the mixture out evenly.

Step 4 -Bake for 25 minutes on the center rack.

Step 5 -Let it cool before cutting into squares.

Step 6 -Serve.
