For the chili:

  • 2 tablespoons vegetable oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound lean ground beef
  • 2 1/2 tablespoons chili powder
  • 1 teaspoon sugar
  • 1/2 teaspoon cumin
  • 1 teaspoon Worcestershire sauce
  • 3 tablespoons tomato paste
  • 1 cup beef broth
  • 3 tablespoons corn meal
  • 1/2 tablespoon kosher salt, plus more, to taste

For serving:

  • 8 hot dogs, cooked and hot
  • 8 hot dog buns
  • cheddar cheese, to taste, shredded

Step 1 –In a medium saucepan over medium-high heat, add the oil and the onions and sauté until they are translucent.

Step 2 –Add the garlic to the onion and cook until fragrant, about 1 minute.

Step 3 –Add the beef to the onion mixture and cook until it is no longer pink. As it begins to brown, use a potato masher to grind it into small bits.

Step 4 –Drain the excess grease from the saucepan.

Step 5 –Add the chili powder, the sugar, the cumin, the Worcestershire sauce, the tomato paste, the beef broth, the corn meal, and 1/2 tablespoon of the salt to the beef mixture and stir to combine.

Step 6 –Reduce the heat to a simmer and cook for 15 minutes.

Step 7 –Taste the chili mixture and add more of the salt as needed.

Step 8 –Place the hot dogs in the buns, top with the chili, and sprinkle with the cheese.
