  • 4 large eggs, hard-boiled and cooled
  • 1/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon chives, chopped
  • 1 tablespoon parsley, chopped
  • salt, to taste
  • pepper, to taste
  • toast, optional, to taste, for serving

Directions

Step 1 –Peel and roughly chop the cooled hard-boiled eggs.

Step 2 –Transfer the chopped eggs into a mixing bowl.

Step 3 –Mash the eggs with a fork until the eggs are small chunks.

Step 4 –In the same mixing bowl, add the mayonnaise, the Dijon mustard, the apple cider vinegar, the chives, and the parsley and mash together to combine.
