Ingredients

  • 4 green onions
  • 1/2 head napa cabbage, sliced thinly
  • 1/2 head red cabbage, sliced thinly
  • 1/2 cup cilantro leaves
  • 2 limes
  • 1/2 cup non-fat Greek yogurt
  • 1 1/2 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper

Directions

Step 1 –Slice the green onions long and diagonally across the grain, so the green onion pieces are similar in shape to the cabbage.

Step 2 –Toss the green onions, the napa cabbage, the red cabbage, and the cilantro together in a large bowl.

Step 3 –Zest both of the limes and then juice 1 of the limes.

Step 4 –In a bowl, mix the lime zest, the lime juice, the yogurt, the sugar, the salt, and the pepper.

Step 5 –Pour the dressing over the cabbage mixture, stirring to combine.

Step 6 –Serve.
