Double Cheese Mac N’ Cheese

Ingredients

  • 1 (16-ounce) package elbow macaroni
  • 1/3 cup plus 1/4 cup butter, divided
  • 3/4 cup onion, finely chopped
  • 6 tablespoons all-purpose flour
  • 1 teaspoon ground mustard
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 1/2 cups 2% milk
  • 4 cups sharp cheddar cheese, shredded
  • 3/4 cup breadcrumbs

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large pot of boiling water, cook the macaroni to al dente, according to the package directions. Drain the macaroni.

Step 4 –In a Dutch oven over medium heat, add 1/3 cup of the butter and the onion and sauté until tender.

Step 5 –Stir the flour, the ground mustard, the salt, and the pepper into the onion mixture until blended, then gradually stir in the milk.

Step 6 –Bring the sauce mixture to a boil and cook, stirring constantly, until it thickens.

Step 7 –Stir the cheese into the sauce until it melts.

Step 8 –Stir the macaroni into the sauce.

Step 9 –Transfer the macaroni mixture into the prepared baking dish.

Step 10 –In a microwave, melt the remaining butter, then toss it with the breadcrumbs.

Step 11 –Sprinkle the buttered breadcrumbs over the macaroni mixture.

Step 12 –Bake the macaroni mixture, uncovered, until heated through, about 30-35 minutes.
