Dutch Country Tea Rolls

Ingredients

  • 5 1/4 cups all-purpose flour, spooned and leveled, divided, plus more, to taste, for dusting a work surface
  • 1 1/3 cups 1% low-fat milk, warmed to 100-110 degrees F, plus 3 tablespoons, room temperature
  • 2 1/4 teaspoons quick-rise yeast
  • 1/2 cup sugar
  • 1/4 cup butter, melted, then cooled to room temperature
  • 1 teaspoon salt
  • 1 large egg
  • nonstick cooking spray, to taste
  • 1 1/2 teaspoons poppy seeds

Directions

Step 1 –In a large bowl, add 2 cups of the flour, 1 1/3 cups of the warm milk, and the yeast and stir to combine.

Step 2 –Cover the bowl with plastic wrap and let it stand until it is very bubbly and has almost tripled in size, about 1 hour 30 minutes.

Step 3 –Add 3 cups of the flour, the sugar, the butter, the salt, and the egg to the yeast mixture and use a wooden spoon to stir until it is well-combined, about 3 minutes.

Step 4 –Use the extra flour to dust a work surface.

Step 5 –Turn the dough onto the prepared work surface and knead until it is smooth and elastic, about 8 minutes. While kneading, add enough of the remaining 1/4 cup flour, 1 tablespoon at a time, to prevent the dough from sticking to your hands.

Step 6 –Coat a large bowl with nonstick spray.

Step 7 –Place the dough in the prepared bowl and turn it to coat the top.

Step 8 –Cover the bowl and let the dough rise in a warm place until it has doubled in size, about 1 hour 30 minutes. To check that the dough has risen enough, lightly press it with 2 fingers. If the indentation remains, then it is ready.

Step 9 –Use the extra flour to lightly dust another clean work surface.

Step 10 –Turn the risen dough onto the prepared work surface and lightly dust with the extra flour. Pat it into a 10×8-inch rectangle.

Step 11 –Cut the dough into 20 equal pieces by making 3 lengthwise cuts and 4 crosswise cuts.

Step 12 –Shape the 20 pieces into balls and place them in the prepared baking pan.

Step 13 –Coat a 13×9-inch baking pan with nonstick spray.

Step 14 –Lightly coat the dough balls with the nonstick spray.

Step 15 –Cover the baking pan with plastic wrap and let the balls rise in a warm place until they have doubled in size, about 1 hour.

Step 16 –Preheat the oven to 375 degrees F.

Step 17 –Lightly brush 3 tablespoons of the remaining milk over the dough and sprinkle with the poppy seeds.

Step 18 –Bake the rolls until they are browned, about 20 minutes.

Step 19 –Transfer the baking pan to a wire rack and let the rolls cool for 5 minutes.

Step 20 –Serve.
