Easy Mediterranean Salad

When you combine shredded chicken, hearty chickpeas, fiber-rich cannellini beans, crisp English cucumbers, crunchy red bell peppers, tangy Kalamata olives, earthy artichokes, and fresh mixed greens tossed with a lemon-infused olive oil dressing, you can really feel that fresh-from-the-garden joy. Easy Mediterranean Salad is a journey for the taste buds that won’t leave you hungry.

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 (14-ounce) can chickpeas, drained and rinsed
  • 1 (14-ounce) can cannellini beans, drained and rinsed
  • 1 large English cucumber, diced
  • 2 red bell peppers, diced
  • 1 cup Kalamata olives, pitted and diced
  • 1 (14-ounce) can artichokes, drained and chopped
  • 5 ounces mixed greens, roughly chopped
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly ground pepper
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice, freshly squeezed

Directions

Step 1 –In a large mixing bowl, add the chicken, the chickpeas, the cannellini beans, the cucumbers, the bell peppers, the Kalamata olives, the artichokes, and the greens and toss to combine.

Step 2 –In a small bowl, add the salt, the pepper, the olive oil, and the lemon juice and whisk briskly to combine.

Step 3 –Drizzle the salad with the dressing and toss to combine.

Step 4 –Serve.
