For the taco pie:

  • 1 pound ground beef
  • 1 small onion, finely diced
  • 1 tablespoon fresh garlic, minced
  • 1 tablespoon chili powder
  • 1 (27-ounce) can chili beans, with some of the liquid drained off the top of the can, and leaving some liquid within the beans
  • 1 (14.5-ounce) can petite diced tomatoes, drained
  • salt, to taste
  • pepper, to taste
  • 1 cup cheddar cheese, plus more to taste, grated
  • 2 cups tortilla chips or corn chips

Optional garnishes:

  • green onion, to taste, sliced
  • sour cream, to taste
  • avocado, to taste, diced
  • guacamole, to taste


Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large oven-proof skillet over medium-high heat, cook the beef, the onion, and the garlic until the beef is no longer pink, about 5-7 minutes.

Step 3 –Drain the excess grease from the skillet and return the skillet to the heat.

Step 4 –Stir the chili powder, the beans, and the tomatoes into the beef mixture and simmer until the liquid has slightly thickened, about 5-10 minutes.

Step 5 –Season the beef mixture with the salt and the pepper.

Step 6 –Sprinkle the cheddar cheese over the beef mixture.

Step 7 –Top the beef mixture with the chips.

Step 8 –Bake, uncovered, until the casserole is heated through and the cheese has melted, about 15-20 minutes.

Step 9 –Serve with the green onion, the sour cream, the avocado, and the guacamole.
