Famous Holiday Quiche

Famous Holiday Quiche isn’t just famous for tasting amazing, although it could rest on its laurels with just that. No, it’s called Famous Holiday Quiche, because whatever day you make it, becomes a holiday! The crust is a crisp hashbrown, so it’s already impressive right out of the gate, and then the filling is a creamy, savory, cheesy egg concoction, speckled with succulent bits of ham. Few dishes say comfort and indulgence more than a quiche, and this Famous Holiday Quiche takes those feelings to a new level!

Ingredients

  • 32 ounces frozen, shredded hashbrowns, thawed
  • 1 1/2 sticks unsalted butter, melted
  • 7 large eggs
  • 1 1/2 cups half-and-half
  • 1 1/2 cups mix of Gruyere and Swiss cheese, shredded
  • 1/3 cup fresh chives, chopped
  • 4 ounces sliced deli ham, diced
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –Position an oven rack in the bottom third of the oven and preheat the oven to 425 degrees F.

Step 2 –Generously grease a 9-inch springform pan.

Step 3 –In a large bowl, toss the hashbrowns with the butter until well coated.

Step 4 –Press the hashbrowns evenly into the bottom and up the sides of the prepared pan.

Step 5 –Bake the potato crust until it is a deep golden brown and crispy, about 40-45 minutes.

Step 6 –Reduce the oven temperature to 350 degrees F.

Step 7 –In a large bowl, whisk together the eggs and the half-and-half until combined.

Step 8 –Fold the cheese, the chives, the ham, the salt, and the pepper into the egg mixture.

Step 9 –Pour the egg mixture over the potato crust and bake the quiche until the eggs are set, about 40-45 minutes.

Step 10 –Let the quiche cool in the pan for 10 minutes.

Step 11 –Run a knife around the edge of the pan, unmold the quiche, and transfer it to a serving plate.

Step 12 –Serve.
