Snuggled between two fluffy buns is juicy ground beef, the nod to Joe, plus a whole bunch of that Tex-Mex flavor sprinkled in from the Frito pie. Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 4 cloves garlic, chopped
  • 1 tablespoon ancho chili powder
  • 1 teaspoon chipotle chili powder
  • 2 teaspoons ground cumin
  • 1 tablespoon smoked paprika
  • 1 (28-ounce) can diced tomatoes
  • 2 (14.5-ounce) cans red kidney beans
  • 2 teaspoons oregano
  • 2 teaspoons Worcestershire sauce
  • salt, to taste
  • pepper, to taste
  • 2 cups corn chips
  • 1 cup cheddar cheese, shredded
  • 8 hamburger buns, halved

Directions

Step 1 –Preheat the oven to broil.

Step 2 –Grease a 13×9-inch baking dish.

Step 3 –In a large saucepan over medium-high heat, add the beef and the onion and cook, while crumbling the meat, until the beef is no longer pink, about 7-10 minutes.

Step 4 –Tilt the saucepan and discard any of the excess grease with a spoon.

Step 5 –Add the garlic, the ancho chili powder, the chipotle chili powder, the cumin, and the paprika to the beef mixture and cook until fragrant, about 1 minute.

Step 6 –Add the tomatoes and their juices, the kidney beans and their liquid, the oregano, and the Worcestershire sauce to the beef mixture and bring to a boil.

Step 7 –Reduce the heat and simmer the beef mixture, covered, about 10 minutes. Simmer longer if you prefer more of the liquid to cook off.

Step 8 –Add the salt and the pepper to the beef mixture and stir to combine. Transfer the saucepan from the heat.

Step 9 –Pour the chili in the bottom of the prepared baking dish.

Step 10 –Cover the beef mixture with the corn chips, then sprinkle with the cheddar cheese.

Step 11 –Broil the beef mixture until the cheese has melted, about 1-2 minutes.

Step 12 –Evenly scoop the beef mixture onto each of the bottom buns, then top with the remaining top buns.

Step 13 –Serve.
