Ingredients

  • 7 cloves garlic, minced
  • 1 cup butter, softened
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons salt
  • 1 tablespoon pepper
  • 5 pounds boneless ribeye roast, trimmed
  • 2 tablespoons flour
  • 2 cups beef stock
  • mashed potatoes, optional, for serving
  • green beans, optional, for serving

Directions

Step 1 –Preheat the oven to 500 degrees F.

Step 2 –Combine the garlic, butter, rosemary, thyme, salt, and pepper in a bowl until fully mixed.

Step 3 –Rub the herb butter mixture over the entire rib roast.

Step 4 –Set the rib roast on a roasting tray with a rack.

Step 5 –Bake the roast for 5 minutes per pound of meat.

Step 6 –Turn off the heat and leave the rib roast in the oven to sit for 2 hours.

Step 7 –After 2 hours, remove the roast from the oven and from the pan.

Step 8 –Pour the pan drippings into a saucepan over medium heat.

Step 9 –Add in the flour and whisk until there are no lumps and the raw flour smell dissipates.

Step 10 –Add in the beef stock, constantly stirring and bringing the sauce to a boil.

Step 11 –Remove from heat, then strain the sauce into a gravy dish.

Step 12 –Cut the prime rib into 3/4 inch slices.

Step 13 –Serve with mashed potatoes and green beans, if desired.
