Ingredients

  • 4 large ripe bananas, mashed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/4 cup grass-fed butter, melted and cooled
  • 1 2/3 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup coconut sugar
  • 2 teaspoon ground cinnamon, optional
  • 2/3 cup chocolate chips, optional

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a 9×5-inch baking loaf pan with parchment paper.

Step 3 –Mash the bananas in a medium sized mixing bowl.

Step 4 –Add in the eggs, vanilla extract, and cooled melted butter until well-combined using a whisk.

Step 5 –In another mixing bowl, add in the gluten-free flour, the baking soda, sea salt, coconut sugar, cinnamon, and chocolate chips until it is fully combined.

Step 6 –Pour the dry mixture into the mixing bowl with the wet ingredients, mixing it until the batter is thoroughly combined. Don’t worry about overmixing.

Step 7 –Pour the batter into the parchment lined baking loaf pan, topping the batter with additional chocolate chips.

Step 8 –Bake the loaf on the center rack in the oven until the top is golden brown and the loaf has risen considerably, about 40 minutes.

Step 9 –Turn off the oven and allow the loaf to sit in the warm oven until the edges crisp slightly, about 5-10 minutes.

Step 10 –Take the loaf out of the oven and let it cool for around 30 minutes before slicing it and serving.
