Ingredients

  • 6 ounces chicken stuffing mix, plus the ingredients called for on the box
  • 1 tablespoon butter
  • 6 chicken breasts, boneless and skinless, optionally cubed
  • 1/2 teaspoon black pepper
  • 1/2 pound fresh green beans, trimmed and cut into 1-inch lengths
  • 1/4 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 5 ounces cream cheese, cubed

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Spray a 9×13-inch baking dish with cooking spray.

Step 3 –Prepare the stuffing mix according to the package directions.

Step 4 –In a large skillet, melt the butter over medium heat.

Step 5 –Add the chicken to the melted butter and sprinkle it with the pepper.

Step 6 –Cook until the chicken is almost cooked through at 140 degrees F, about 3-4 minutes per side if using whole breasts and about 3-4 minutes total if using cubed chicken. The chicken will finish cooking in the oven.

Step 7 –Place the chicken in the prepared baking dish.

Step 8 –In the same skillet, cook and stir the beans until crisp-tender, about 6 minutes.

Step 9 –Sprinkle the beans with the flour and cook until the raw flour smell disappears, about 1 minute.

Step 10 –Stir in the broth and let simmer, stirring frequently, about 3 minutes.

Step 11 –Add the cream cheese and stir until melted.

Step 12 –Spoon the green beans and the sauce over the chicken.

Step 13 –Top the green beans and chicken with the stuffing.

Step 14 –Bake until heated through and the chicken has reached 165 degrees F internally, about 30 minutes.

Step 15 –Serve.
