Green-With-Envy Bake

This Green-With-Envy Bake brings you the good kind of jealousy. The kind that motivates you to put in the effort for a delicious reward at the end! Granted, this creamy, cheesy rice and veggie dish is pretty simple to make. You essentially mix it all together, drop it in the oven, and bam! The only thing green around you will be the nourishing spinach you’ll be consuming. Channel your energy for good and make the Green-With-Envy Bake!

Ingredients

  • 2 1/2 cups basmati or long-grain rice, cooked
  • 2 cups sharp cheddar cheese, shredded, divided
  • 1 cup ricotta cheese
  • 1 cup sour cream
  • 2 cloves garlic, minced or finely chopped
  • salt, to taste
  • pepper, to taste
  • 10 ounces frozen chopped spinach, thawed and drained
  • 1 medium green bell pepper, chopped
  • 4 scallions, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 2-quart casserole.

Step 3 –In a large mixing bowl, add the rice, 3/4 of the cheddar, the ricotta, the sour cream, and the garlic and stir to combine.

Step 4 –Season the rice mixture with the salt and the pepper and mix until well-blended.

Step 5 –Add the spinach, the bell pepper, and the scallions to the rice mixture and mix well.

Step 6 –Pour the casserole mixture into the prepared casserole dish and evenly sprinkle with the remaining cheese.

Step 7 –Bake the casserole until it is golden, about 30 minutes.

Step 8 –Let the casserole rest for 5 minutes.

Step 9 –Serve.
