Hearty Blueberry Oatmeal Loaf

You can’t feel any guilt with this one! Hearty Blueberry Oatmeal Loaf has some hints of sweetness, which we know you love, but there’s a little somethin’-somethin’ mixed in there (thanks to the oatmeal) to fill you up, too! Your sweet tooth is satisfied and your tummy is full. It’s safe to say a slice (or two) of this Hearty Blueberry Oatmeal Loaf is the best way to start your day!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup Greek yogurt
  • 2 eggs
  • 1 stick butter, melted and slightly cooled
  • 1 teaspoon vanilla
  • 1/2 cup oats
  • 1 cup fresh blueberries, plus more, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat one 9×5-inch loaf pan with cooking spray, then line it with parchment paper.

Step 3 –In a large bowl, add the flour, the sugar, the baking powder, and the salt and whisk to combine.

Step 4 –In a second large bowl, add the yogurt, the eggs, the butter, and the vanilla, and mix together with a fork.

Step 5 –Fold the yogurt mixture into the flour mixture.

Step 6 –Mix the oats into the batter.

Step 7 –Gently fold 1 cup of the blueberries into the batter. It will be thick and a little sticky.

Step 8 –Pour the batter into the prepared loaf pan and sprinkle with the extra blueberries.

Step 9 –Bake the bread until it is golden-brown and a toothpick inserted into middle comes out clean, about 45-55 minutes.

Step 10 –Transfer the pan to a wire rack and let the bread cool, about 10 minutes.
