Ingredients

  • 2 tablespoons avocado oil or canola oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds medium beets, peeled, halved, and cut into small wedges
  • 2 tablespoons honey
  • 2 tablespoons lemon juice

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Place an empty 18×26-inch rimmed baking sheet in the oven to heat.

Step 3 –In a large bowl, add the canola oil, the salt, and the black pepper and mix well.

Step 4 –Add the beets to the oil mixture and toss well to coat.

Step 5 –Carefully transfer the baking sheet from the oven, add the seasoned beets, and bake, until they are almost tender, about 20-25 minutes.

Step 6 –Drizzle the beets with the honey and the lemon juice.

Step 7 –Bake the beets until they are tender, about 5 minutes.

Step 8 –Plate and serve.
