In-A-Pickle Coleslaw

Don’t get yourself in a bind (AKA a pickle) and not have “the dish” for your next picnic. Be prepared for greatness with In-A-Pickle Coleslaw. Crisp, thickly sliced cabbage is covered with a sweet mustard and mayonnaise dressing, along with the debut of your favorite pickle and its juices to liven things up a bit. Get yourself out of the pickle and don’t take just any old boring dish to your next shindig. In-A-Pickle Coleslaw solves all of your problems and will be the hit of the party. Get your pickle on!

Ingredients

  • 1/2 cup honey
  • 1/2 cup rice wine vinegar
  • 2 tablespoons mayonnaise
  • 1 tablespoon spicy mustard
  • 1 cup extra-virgin olive oil
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 (2-pound) head green cabbage, thickly sliced
  • 1 small red onion, thinly sliced
  • 1 cup Chinese celery or celery leaves, roughly chopped
  • whole pickles, such as dill or sweet, to taste, chopped, plus the juices

Directions

Step 1 –In a medium bowl, add the honey, the rice wine vinegar, the mayonnaise, and the mustard and whisk to combine.

Step 2 –Slowly drizzle the olive oil into the honey mixture and whisk to combine.

Step 3 –Add the salt and the black pepper to the honey mixture and whisk to combine.

Step 4 –In a large bowl, add the cabbage, the red onion, the Chinese celery, the pickles, and the dressing mixture and stir well to combine.

Step 5 –Taste the coleslaw and season with the salt and the pepper, as needed. Stir to combine.

Step 6 –Add the pickle juice to the coleslaw, a little at a time, and toss to combine.

Step 7 –Tightly cover the bowl and place in the refrigerator to marinate until ready to serve.

Step 8 –Serve.
