Ingredients
For the salad:
- 1 1/2 cups cucumber, finely diced
- 1 cup Roma tomato, seeded and finely diced
- 1/4 cup red onion, minced
- 1 cup red and yellow bell peppers mixed, finely diced
- 1/4 cup parsley leaves, minced
- 1 tablespoon mint leaves, minced
For the dressing:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- salt, to taste
- pepper, to taste

Directions
Step 1 –In a large bowl, add the cucumber, the tomato, the onion, the bell pepper mix, the parsley, and the mint.
Step 2 –In a small bowl, add the olive oil, the lemon juice, the salt, and the pepper and whisk together.
Step 3 –Pour the dressing over the vegetable mixture and toss to evenly coat.
Step 4 –Serve.
