Israeli Salad

If that’s you, then you should definitely give this Israeli Salad a try. It’s such an easy way to experience the fresh, healthy, juicy flavors inspired by the Middle East! Ingredients

For the salad:

  • 1 1/2 cups cucumber, finely diced
  • 1 cup Roma tomato, seeded and finely diced
  • 1/4 cup red onion, minced
  • 1 cup red and yellow bell peppers mixed, finely diced
  • 1/4 cup parsley leaves, minced
  • 1 tablespoon mint leaves, minced

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –In a large bowl, add the cucumber, the tomato, the onion, the bell pepper mix, the parsley, and the mint.

Step 2 –In a small bowl, add the olive oil, the lemon juice, the salt, and the pepper and whisk together.

Step 3 –Pour the dressing over the vegetable mixture and toss to evenly coat.

Step 4 –Serve.
