Marinated Grilled Veggies

Remembering to get your veggies in in the midst of a cookout can be a challenge. After all, there are so many burgers to eat! But with these Marinated Grilled Veggies, you might just be craving more greens on your plate! These garden-fresh, tender, juicy veggies are marinated with savory soy sauce and bright lemon juice, heated with the kiss of the grill! Marinated Grilled Veggies get into the backyard BBQ spirit, and you’ll be feeling it, too!

Ingredients

  • 1 (6-ounce) zucchini, sliced into rounds
  • 1 (6-ounce) yellow squash, sliced into rounds
  • 1/2 yellow bell pepper, cut into strips
  • 1/2 red bell pepper, cut into strips
  • 1/2 red onion, cut into strips
  • 8 ounces white button mushrooms, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup olive oil
  • 1/2 cup soy sauce
  • 1/2 cup lemon juice
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, plus more, to taste, optional, for garnish
  • parsley leaves, optional, to taste, for garnish

Directions

Step 1 –In a gallon-sized resealable plastic bag, add the zucchini, the yellow squash, the yellow bell pepper, the red bell pepper, the red onion, the mushrooms, and the cherry tomatoes.

Step 2 –Whisk together the olive oil, the soy sauce, the lemon juice, the garlic, the salt, and 1/4 teaspoon of the pepper.

Step 3 –Pour the marinade over the vegetables and seal the bag.

Step 4 –Refrigerate the vegetable mixture for at least 30 minutes.

Step 5 –Transfer the vegetables from the marinade and place them in a large grill basket.

Step 6 –Preheat the grill to medium heat.

Step 7 –Place the vegetables on the grill and cook until tender, about 15-20 minutes.

Step 8 –Serve garnished with the parsley and the extra black pepper.
