Ingredients
- 1 orange, thinly sliced with the peel on
- 1/2 onion, thinly sliced
- 4 cloves garlic, halved, smashed
- 2 1/4 pounds skirt steak
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 cup light-colored beer, preferably lager style
- 1/2 cup soy sauce
Directions
Step 1 –In a wide, shallow glass baking dish, scatter 1/2 of the orange slices, 1/2 of the onion slices, and 1/2 of the garlic pieces.
Step 2 –Sprinkle the steak with the salt and the pepper on all sides.
Step 3 –Place the seasoned steak in the baking dish, atop the layer of oranges, onions, and garlic.
Step 4 –Scatter the remaining orange slices, the remaining onion slices, and the remaining garlic pieces over the steak.
Step 5 –Pour in the beer and the soy sauce.
Step 6 –Cover the steak with plastic wrap and marinate for at least 1 hour at room temperature, or up to overnight in the refrigerator.
Step 7 –Preheat the grill to medium-high heat or preheat the broiler.
Step 8 –Transfer the steak from the marinade, and discard the marinade.
Step 9 –Grill the steak to your desired level of doneness, about 4 minutes per side for medium-rare.
Step 10 –Serve.
