Mimi’s Pineapple Ham

Goodness! Oh my! Just thinking of it… can’t you almost smell it?! If it’s a holiday, Mimi’s Pineapple Ham is on the menu, and you are in for an aromatic treat! The fragrance of fresh tangy pineapple and smoky-sweet brown sugar with a touch of Dijon mustard permeates the ham (and the air) in a beautiful melody. There just isn’t anything more enticing than the savory sweet deliciousness of Mimi’s Pineapple Ham. It’s one sweet meal!

Ingredients

  • 1 (7-9-pound) bone-in ham, fully-cooked
  • 1 (20-ounce) can crushed pineapple
  • 1 cup brown sugar, packed
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon ground cloves

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Place the ham on a rack in a shallow roasting pan.

Step 3 –Using a knife, score the surface of the ham with 1/2-inch-deep cuts in a diamond pattern.

Step 4 –Cover the ham with aluminum foil and bake for 1 hour 30 minutes.

Step 5 –In a small bowl, add the crushed pineapple and its juices, the brown sugar, the Dijon mustard, and the cloves, and mix to combine.

Step 6 –Transfer the ham from the oven and evenly pour and spread the pineapple mixture on top of the ham, pressing the mixture into the cuts.

Step 7 –Transfer the ham to the oven, uncovered, and bake until the ham reaches an internal temperature of 145 degrees F, about 30 minutes-1 hour.

Step 8 –Serve.
