Mini Meatloaf Sheet-Pan Meal

Everything miniature tends to be better, and that stands true for this Mini Meatloaf Sheet-Pan Meal. If the juicy, sweet, and ketchup-y mini loaves aren’t convincing enough on their own, knowing that they take less than an hour to bake should do the trick. And if that isn’t enough, they are accompanied by aromatic garlic and olive-oil-smothered potatoes and asparagus–so no brainstorming of sides is necessary. Mini Meatloaf Sheet-Pan Meal, we thank you. Ingredients

  • 2 eggs, lightly beaten
  • 1 cup tomato juice
  • 3/4 cup quick-cooking oats
  • 1/4 cup onion, finely chopped
  • 1/2 teaspoon salt
  • 1 1/2 pounds ground beef, 90% lean
  • 1/4 cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon ground nutmeg
  • 3 large potatoes, peeled and cut into 1/2-inch pieces
  • 3 tablespoons olive oil, divided
  • 1/2 teaspoon garlic salt, divided
  • 1/4 teaspoon pepper, divided
  • 1 pound asparagus, trimmed and halved

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –In a large bowl, combine the eggs, the tomato juice, the oats, the onion, and the salt.

Step 3 –Add the ground beef to the egg mixture and mix lightly, but thoroughly.

Step 4 –Shape the meat mixture into six, 4×2-1/2-inch, loaves.

Step 5 –Place the loaves on a sheet pan or large shallow roasting pan.

Step 6 –Combine the ketchup, the brown sugar, the mustard, and the nutmeg in a bowl.

Step 7 –Brush the ketchup mixture over the tops of the loaves.

Step 8 –In a mixing bowl, combine the potatoes with 2 tablespoons of the olive oil, 1/4 teaspoon of the garlic salt, and 1/8 teaspoon of the pepper, tossing to coat.

Step 9 –Next to the loaves, add the potatoes in a single layer on the pan.

Step 10 –Bake for 25 minutes.

Step 11 –In a mixing bowl, combine the asparagus with the remaining 1 tablespoon of the olive oil, 1/4 teaspoon of the garlic salt, and 1/8 teaspoon of the pepper, tossing to coat.

Step 12 –Take the pan from the oven and add the asparagus next to the potatoes and the loaves.

Step 13 –Bake the dish until a thermometer inserted into the mini loaves reads 160 degrees F and the potatoes and asparagus are tender, about 15-20 minutes.

Step 14 –Let the dish stand for 5-10 minutes before serving.

Step 15 –Plate and serve.
