Nana’s Tot Casserole

Ingredients

  • 4 chicken strips, skinless and boneless
  • 1 (10.5-ounce) can chicken gravy
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 cup evaporated milk
  • 1 cup sage and onion stuffing mix
  • 1/2 cup onion, minced
  • 2 teaspoons garlic, minced
  • 1/4 teaspoon celery seed
  • black pepper, to taste
  • 1 (32-ounce) package frozen bite-sized potato nuggets
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • fresh parsley, optional, to taste, roughly chopped, for garnish

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Spray a 9×13-inch baking pan with olive oil cooking spray.

Step 3 –Heat a large skillet over medium heat.

Step 4 –Spray the skillet lightly with olive oil cooking spray.

Step 5 –Add the chicken strips and cook until they are no longer pink in the center and the juices run clear, reaching 165 degrees F internally about 4 minutes per side.

Step 6 –Cut the chicken into cubes.

Step 7 –Transfer the cubed chicken to a large bowl.

Step 8 –Add the gravy, the cream of chicken soup, the evaporated milk, the stuffing mix, the onion, the garlic, the celery seed, and the black pepper and mix until combined.

Step 9 –Spread the frozen potato nuggets in the bottom of the prepared pan.

Step 10 –Pour the chicken mixture evenly on top of the nuggets.

Step 11 –Sprinkle the mozzarella cheese and the cheddar cheese on top of the chicken mixture.

Step 12 –Bake until golden and bubbly, about 45 minutes.

Step 13 –Garnish with the fresh parsley and serve.
