Ingredients
- 2 cups instant rice
- 1 (16-ounce) package frozen broccoli-cauliflower blend, thawed
- 4 (6-ounce) orange roughy fillets
- 1 (14.5-ounce) can chicken broth
- 1 (14.5-ounce) can fire-roasted diced tomatoes, undrained
- 1 teaspoon garlic powder
- 1 teaspoon lemon-pepper seasoning
- 1/4 teaspoon cayenne pepper, plus more to taste
- 1/2 cup cheddar cheese, shredded
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Grease a 9×13-inch baking dish.
Step 3 –Spread the rice in an even layer at the bottom of the prepared baking dish.
Step 4 –Layer the broccoli-cauliflower blend and the fish over the rice in the baking dish.
Step 5 –Pour the chicken broth and the tomatoes over the top of the vegetable blend and the fish.
Step 6 –Sprinkle the garlic powder, the lemon-pepper seasoning, and the cayenne pepper over the fish and vegetables.
Step 7 –Cover and bake until the fish flakes easily reaching 145 degrees F internally and the rice is tender, about 25-30 minutes.
Step 8 –Sprinkle the cheddar cheese on top of the fish and vegetables and bake until melted, about 5 minutes.
Step 9 –Serve.
