Ingredients

  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, minced, plus more, to taste, for garnish
  • freshly ground black pepper, to taste
  • 1 tablespoon sea salt
  • 4 (10-ounce) New York strip steaks, room temperature
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup cooking sherry
  • 1 cup heavy cream, room temperature

Directions

Step 1 -In a small bowl, add the garlic, 2 tablespoons of the rosemary, the black pepper, and the sea salt and mix to combine.

Step 2 -Rub each steak evenly with the herb mixture.

Step 3 -In a large skillet over medium-high heat, add the butter and the olive oil and heat them until the butter is bubbling.

Step 4 -Add the steaks to the butter-oil mixture and cook until a light jacket forms, about 2-3 minutes per side.

Step 5 -Add the cooking sherry to the skillet and cook the steaks until they reach an internal temperature of 145 degrees F for medium doneness, about 2 minutes 30 seconds per side.

Step 6 -Transfer the steaks from the heat and allow them to rest for 5 minutes.

Step 7 -Reduce the stovetop heat to medium-low.

Step 8 -Add the heavy cream to the sherry in the skillet and simmer until thickened, about 5 minutes.

Step 10 -Garnish with the extra rosemary and serve.
