Ingredients

For the syrup:

  • 1/2 cup sugar
  • 1/2 cup water
  • zest and juice of 1 pink or red grapefruit
  • 1/2 vanilla bean

For the fruit salad:

  • 3 pink or red grapefruits, cut into small pieces, peel discarded
  • 1 quart strawberries, hulled and halved
  • 4 cups red grapes, halved
  • 1 pint raspberries
  • 1/4 cup fresh mint, thinly sliced

Directions

Step 1 –In a small saucepan over medium heat, combine the sugar, the water, the grapefruit zest, the grapefruit juice, and the vanilla bean half and stir to combine.

Step 2 –Bring the syrup mixture to a boil, stir to dissolve the sugar, reduce the heat to low, and simmer until the syrup slightly thickens, about 6-8 minutes.

Step 3 –Add the grapefruit pieces, the strawberries, and the grapes to a large bowl.

Step 4 –Discard the vanilla bean half from the syrup.

Step 5 –Pour the syrup over the fruit and toss to coat.

Step 6 –Chill the fruit salad until ready to serve or up to overnight.

Step 7 –Add the raspberries and the mint to the salad and gently toss.

Step 8 –Serve.
