Seaside Shrimp Foil Packet

Grab an Adirondack chair and relax with one of the most simplistic, amazing meals. Seaside Shrimp Foil Packets are a refreshingly relaxing way to show off your grilling skills. Plump, juicy shrimp are deliciously marinated with chunks of red and green bell peppers, zucchini, yellow squash, and red onions along with some sweet corn kernels. Ingredients

  • 1 pound shrimp, tail-on, peeled and deveined
  • 1/2 red bell pepper, cut into chunks
  • 1/2 green bell pepper, cut into chunks
  • 1 small zucchini, cut into chunks
  • 1 small yellow squash, cut into chunks
  • 1/2 cup corn kernels
  • 1/2 small red onion, cut into chunks
  • 3 cloves garlic, finely chopped
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 teaspoons dried thyme
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley leaves, for garnish

Directions

Step 1 –Preheat the grill to 425 degrees F.

Step 2 –In a large bowl, add the shrimp, the red bell peppers, the green bell peppers, the zucchini, the squash, the corn kernels, the red onions, and the garlic and stir to combine.

Step 3 –Add the olive oil, the thyme, the oregano, the paprika, the salt, and the black pepper to the shrimp mixture and mix well to coat.

Step 4 –Tightly cover and transfer the shrimp mixture to the refrigerator and let it marinate, about 2-3 hours.

Step 5 –Prepare four 12×15-inch sheets of aluminum foil. Evenly divide the shrimp mixture and place it into the center of each piece of foil.

Step 6 –Lift and bring together the two long edges of the aluminum foil and roll them tightly together several times to create a seal. Then, roll up the remaining short edges to form another tight seal.

Step 7 –Place the shrimp packets, sealed-side down, on the grill and cook, flipping them once halfway through until the shrimp reaches an internal temperature of 145 degrees F, about 12-14 minutes.

Step 8 –Garnish the shrimp mixture with the parsley and serve.
