Simply Glazed Pork Chops

Ingredients

  • 4 pork chops, center cut
  • salt, to taste
  • pepper, to taste
  • 3 tablespoon extra-virgin olive oil
  • 1 (14-ounce) can jellied cranberry sauce
  • 1 tablespoon orange peel, dried and grated
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons water

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Bring the pork chops to room temperature, pat them dry, and season with the salt and pepper on both sides.

Step 3 –In a large, heavy skillet over medium-high heat, heat the oil.

Step 4 –In a bowl, combine the cranberry sauce and the orange peel and stir until well-blended.

Step 5 –Set aside 1/2 of the cranberry mixture for the pork chops and store the rest in the refrigerator for another use.

Step 6 –Add the balsamic vinegar to the cranberry mixture and stir until blended.

Step 7 –Arrange the pork chops in the hot skillet and sear just until browned on one side, about 2 minutes.

Step 8 –Flip the pork chops over and sear the other side, about 2 minutes. The pork chops will not be cooked through at this point.

Step 9 –Transfer the seared pork chops to an 8×8-inch baking dish.

Step 10 –Add the water to the bottom of the pan.

Step 11 –Generously spread the cranberry mixture over the top of the pork chops.

Step 12 –Place the baking dish on the middle oven rack and bake for 10 minutes.

Step 13 –Switch the oven to broil and broil the pork chops until the cranberry glaze is caramelized, about 1 minute. Be sure to watch closely to prevent them from burning.

Step 14 –Let the pork chops rest for 5 minutes.

Step 15 –Serve.
