Single-Serve Sausage Cups

Ingredients

  • 1 pound breakfast sausage
  • 1 medium onion, diced
  • 15 large eggs
  • salt, to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1 medium green bell pepper, diced
  • 1 cup cheddar cheese, freshly grated

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Generously spray an 18-cup muffin tin with nonstick cooking spray.

Step 3 –In a large skillet over medium-high heat, cook the sausage, while crumbling, until it is about 3/4 browned.

Step 4 –Add the onion to the sausage, reduce the heat to medium-low, and cook, stirring occasionally, until the sausage is no longer pink and the onion is soft.

Step 5 –Transfer the sausage mixture from the heat and let it cool slightly.

Step 6 –In a bowl, whisk the eggs, the salt, the pepper, and the chili powder together until combined.

Step 7 –Add the bell pepper and the cheese to the egg mixture and stir to combine.

Step 8 –Add the slightly cooled sausage by the spoonful to the egg mixture and stir until everything is mixed together.

Step 9 –Use a measuring cup to scoop the sausage mixture into the prepared muffin cups.

Step 10 –Bake the sausage cups until they are puffy and just barely set, about 20-22 minutes.

Step 11 –Run a knife along the edges of the muffin cups and lift them out of the pan.

Step 12 –Serve.
