Spring Ham & Pea Pasta Salad

Ingredients

  • 1/3 cup mayonnaise
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 3 tablespoons sour cream
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons fresh mint, chopped
  • 1 1/2 tablespoons fresh lemon juice
  • kosher salt, to taste
  • black pepper, to taste
  • 8 ounces dried penne or pennette
  • 1 1/2 cups frozen peas, thawed
  • 1 cup ham, diced

Directions

Step 1 –Bring a large pot of salted water to a boil.

Step 2 –In a large bowl, whisk the mayonnaise, the parsley, the sour cream, the chives, the mint, the lemon juice, the salt, and the pepper.

Step 3 –Add the pasta to the boiling water and cook to al dente, according to the package directions.

Step 4 –Add the peas to the pot 3 minutes before the pasta is finished cooking.

Step 5 –Drain and rinse the pasta under cold water.

Step 6 –Add the pasta and the ham to the mayonnaise mixture and toss to coat.

Step 7 –Season the pasta salad with the salt and the pepper.
