Surprise Hash Brown Bake

Well, while they’re blown away by all the warm, creamy, cheesy, potato-filled flavors of this Surprise Hash Brown Bake, they’ll be completely clueless of the tender, nutritious cauliflower that you mixed in. They’ll be blissfully enjoying themselves, while you are feeling good about what you served them. It’s up to you whether or not you tell them what your secret ingredient is, but either way, we know they’re sure to be enthused about Surprise Hash Brown Bake!

Ingredients

  • 3 cups cauliflower, cooked and chopped
  • 4 cups frozen shredded potatoes
  • 1 (10.5-ounce) can reduced-fat cream of chicken soup
  • 1 1/2 cups non-fat plain Greek yogurt
  • 1 onion, diced
  • 1 1/4 cups sharp cheddar cheese, divided
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, add the cauliflower, the potatoes, the cream of chicken soup, the yogurt, the onion, and 1/4 cup of the cheese and stir to combine.

Step 4 –Season the potato mixture with the salt and the pepper and stir to combine.

Step 5 –Spread the potato mixture into the prepared baking dish.

Step 6 –Sprinkle the remaining cheese over the potato mixture, then cover the baking dish with foil.

Step 7 –Bake the hash brown bake until the potatoes are tender and fully cooked, about 45-55 minutes.

Step 8 –Switch the oven setting to broil.

Step 9 –Uncover the baking dish and broil the hash brown bake until the top starts to brown, about 5-8 minutes.

Step 10 –Serve.
