Some gestures show how much you care about someone. One of those gestures is making your special someone a bowl of Sweet-on-You Soup. Much like your loved one, there’s just so much to love about this soup; the creamy, savory, caramel-flavored sweet potato purée that makes up its base, the notes of chicken and pork infused throughout, and the crumbles of crispy bacon on top. Doting on someone has never been easier than with this Sweet-on-You Soup!


  • 6 strips bacon
  • 1 medium onion, diced
  • 1 large rib celery, diced
  • 2 cloves garlic, minced
  • 3 medium sweet potatoes, peeled and diced
  • 1/2 teaspoon dried thyme leaves
  • 2 teaspoons salt, plus more, to taste
  • 4 cups reduced-sodium chicken broth
  • 1 cup coconut milk
  • 1/8 teaspoon ground black pepper, plus more, to taste
  • 2 tablespoons parsley, optional, chopped, for garnish


Step 1 –In a large pot over medium heat, add the bacon and cook until cook crisp, about 8-10 minutes.

Step 2 –Transfer the bacon, using a slotted spoon, to a paper-towel-lined plate to drain.

Step 3 –Drain all but about 3 tablespoons of the drippings from the pot.

Step 4 –Add the onion and the celery to the bacon drippings and cook, stirring occasionally, until softened, about 4 minutes.

Step 5 –Add the garlic and sauté until fragrant, about 1 minute.

Step 6 –Add the sweet potatoes, the dried thyme, 2 teaspoons of the salt, and the chicken broth to the onion mixture, stirring to combine.

Step 7 –Partially cover the pot with a lid and simmer until the sweet potatoes are fork-tender, about 20 minutes.

Step 8 –Using an immersion blender, or by pouring the soup in batches into a blender, purée the soup until smooth.

Step 9 –Return the soup to the pot if using a blender.

Step 10 –Add in the coconut milk and stir to combine.

Step 11 –Season the mixture with the extra salt and the pepper.

Step 12 –Crumble the cooked bacon.

Step 13 –Serve garnished with the bacon crumbles and the parsley.
