Ingredients

  • 2 (15-ounce) cans of black beans, rinsed and drained
  • 3 ears of corn, cooked and kernels removed from the cob
  • 2 red bell peppers, diced
  • 2 cloves garlic, minced
  • 2 tablespoons shallots, minced
  • 2 teaspoons salt
  • 1/4 teaspoons cayenne pepper
  • 2 tablespoons sugar
  • 9 tablespoons extra-virgin olive oil
  • 1 teaspoon lime zest
  • 6 tablespoons fresh lime juice
  • 1/2 cup fresh cilantro, plus more for garnish, chopped
  • 2 avocados, chopped

Directions

Step 1 –In a large bowl, combine the black beans, corn, bell peppers, garlic, shallots, salt, cayenne, sugar, olive oil, lime zest, lime juice, and 1/2 cup of the cilantro.

Step 2 –Cover the bowl and chill for at least 2 hours and up to overnight.

Step 3 –Before serving, add the avocados.

Step 4 –Gently mix the veggie mixture, being careful not to mash the avocados.

Step 5 –Garnish with the remaining cilantro.

Step 6 –Serve.
