Whole Grain Chicken

Ingredients

  • 2 cups chicken broth
  • 1 cup quinoa
  • 2 teaspoons vegetable oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 pounds chicken, ground
  • 1 1/2 (10-ounce) cans diced tomatoes with green chili peppers

Directions

Step 1 –In a large saucepan, bring the chicken broth and the quinoa to a boil.

Step 2 –Reduce the heat to medium-low, cover, and simmer until the quinoa is tender and the broth has been absorbed, about 15-20 minutes.

Step 3 –Heat the vegetable oil in a large skillet over medium-high heat.

Step 4 –Add the onion and the garlic to the oil and sauté until the onion is translucent, about 5 minutes.

Step 5 –Add the ground chicken to the onion mixture and cook, stirring regularly, until the chicken is browned and crumbly, about 5-7 minutes.

Step 6 –Add the cooked quinoa and the diced tomatoes with green chili peppers to the chicken mixture and stir to combine.

Step 7 –Bring the chicken mixture to a simmer and cook until the flavors meld, about 10 minutes.
