Yum-Yum Asparagus

You have your steak, you’ve got your potato, but there’s just one thing missing from this marvelous meal! Yum-Yum Asparagus is a fresh, perfectly tender veggie that will pull it all together. It brings the upscale steakhouse vibe you were craving in a way that won’t break the bank. That’s just the best! Get ready to feast and make sure Yum-Yum Asparagus is a part of it!

Ingredients

  • 1 large bunch fresh asparagus, woody ends clipped and discarded
  • 2 teaspoons olive oil
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1/2 medium lemon, zested and juiced
  • parmesan cheese, to taste, grated
  • fresh mint or parsley, to taste, finely chopped
  • red pepper flakes, to taste
  • lemon wedges, to taste, for garnish

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Line a large, rimmed baking sheet with parchment paper.

Step 3 –Place the asparagus on the prepared baking sheet and drizzle with the olive oil.

Step 4 –Season the asparagus with the salt and the pepper and toss until they are coated.

Step 5 –Arrange the seasoned asparagus in a single layer on the baking sheet.

Step 6 –Bake the asparagus just until the bases are easily pierced through by a fork, about 9-12 minutes for thin asparagus and about 15-20 minutes for thick asparagus.

Step 7 –Transfer the cooked asparagus to a serving dish.

Step 8 –Season the cooked asparagus with the lemon zest, the lemon juice, the parmesan cheese, the mint, and the red pepper flakes and toss to combine.

Step 9 –Serve the asparagus garnished with the lemon wedges.
