Poor Man’s Steak lets you enjoy the classic flavor of Salisbury Steak even when you’re on a budget. Ground beef is beefed up with cracker crumbs and then pan-fried into a gorgeously-browned steak. Then it’s braised in mushroom soup, giving you a tender, savory dinner with a creamy gravy. Poor Man’s Steak is certainly rich in flavor!
Ingredients
- 1 cup saltine crackers, crushed
- 1/3 cup water
- salt, to taste
- pepper to taste
- 2 pounds of ground beef
- 1/4 cup all-purpose flour
- 2 tablespoons canola oil
- 2 (10.75-ounce) cans condensed cream of mushroom soup, undiluted
- mashed potatoes or noodles, optional, cooked and hot
- fresh parsley, optional, minced
Directions
Step 1 –In a large bowl, combine the cracker crumbs, water, salt, and pepper.
Step 2 –Crumble the beef over the mixture.
Step 3 –Mix lightly but thoroughly.
Step 4 –Press the beef mixture into an ungreased 9-inch square pan.
Step 5 –Cover and refrigerate for at least 3 hours.
Step 6 –Cut the beef mixture into 3-inch squares.
Step 7 –Dredge the squares in the flour.
Step 8 –In a large skillet, heat the oil over medium heat.
Step 9 –Add the beef squares in batches and cook until browned, about 2-3 minutes per side.
Step 10 –Transfer the squares to a 3-quart slow cooker using a slotted spatula or slotted spoon.
Step 11 –Add the soup to the slow cooker.
Step 12 –Cover and cook on high until the meat is no longer pink, about 4 hours.
Step 13 –Serve with mashed potatoes or noodles and garnish with parsley.
