It’s no surprise that Elvis loved bacon. Many of his favorite meals featured bacon prominently, and he used to have a plate of bacon by his piano for snacking while songwriting. Elvis Bites honor the King of Rock n’ Roll by wrapping tender barbecue chicken in his beloved bacon. The tangy, sweet, and savory sauce invokes Elvis’s southern roots, making Elvis Bites endlessly snackable. Serve these at your next party for a little less conversation and a little more action!

Ingredients

  • 6 bacon strips
  • 3/4 pound chicken breasts, boneless, skinless, and cut into 1-inch cubes (about 18 cubes)
  • 3 teaspoons Montreal steak seasoning
  • 1 teaspoon prepared horseradish, optional
  • 1/2 cup barbecue sauce

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Cut the bacon into thirds.

Step 3 –Place the bacon slices on a microwave-safe plate lined with paper towels. Cover the bacon with more paper towels.

Step 4 –Cook the bacon in the microwave until it is partially cooked but not crisp, about 3-4 minutes. The bacon shouldn’t be too crispy since it needs to wrap around the chicken later on.

Step 5 –Place the chicken in a small bowl with the steak seasoning and toss to combine, ensuring the chicken is well coated.

Step 6 –Wrap a piece of bacon around each chicken cube, securing it with a toothpick.

Step 7 –Place each bacon-wrapped chicken piece on a parchment-lined baking sheet.

Step 8 –Bake the chicken for 10 minutes.

Step 9 –Mix the horseradish and barbecue sauce together and brush the mixture over the chicken and bacon.

Step 10 –Continue cooking in the oven until the chicken is no longer pink and the bacon is crisp, about 5-10 minutes more.
