Baked Denver Omelet

Head on up to the Mile High City for a real breakfast (or lunch or dinner, really up to you!) treat! Turns out Denverites really know how to make eggs excellent with Baked Denver Omelet. Cheesy, fluffy, and hearty, Baked Denver Omelet doesn’t mess around when it comes to keeping you full and satisfied. In fact, it even whisks in some ham to ensure there’s always something amazing about each bite! Plus, it’s ready in a flash in just 30 minutes or less! This will change how you see eggs!

Ingredients

  • 1 small yellow onion, finely diced
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup green bell pepper, sliced
  • 1 cup mushrooms, chopped
  • 1 cup ham, fully cooked and diced
  • 1 cup cheddar cheese, shredded
  • 8 eggs
  • 1/2 cup half-and-half
  • salt, to taste
  • freshly ground pepper, to taste
  • fresh parsley, chopped, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a 7×11-inch or 9×9-inch baking dish with cooking spray.

Step 3 –Add the diced onion, the peppers, the mushrooms, and the diced ham to the baking dish, stirring to combine.

Step 4 –Top the mixture with the shredded cheddar cheese.

Step 5 –In a large mixing bowl, combine the eggs, the half-and-half, the salt, and the pepper, whisking until well blended.

Step 6 –Pour the egg mixture over the mixture in the baking dish.

Step 7 –Bake until the eggs are set and the top is a light golden brown, about 23-25 minutes.

Step 8 –Serve garnished with the parsley.
