Nothing beats waking up to a beautiful sunny day in the summer. There really isn’t a more optimistic moment: the whole day stretched out before you, just waiting for you to take your first step. For breakfast on a morning like this, you need something just as bright and cheerful: Strawberry Muffins. Dotted with the ruby jewels of fruit, buttery and tender and sweet, these confections are delights to eat and are fairly easy to make too! Strawberry Muffins taste like summertime and bring on the smiles. Everything is looking up!
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup sugar
- 1 egg, beaten, at room temperature
- 1/2 cup sour cream
- 1/2 cup butter, melted or vegetable oil
- 1/4 cup milk
- 2 teaspoons vanilla
- 1 3/4 cups strawberries, chopped
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Grease 12 muffin wells or line them with paper liners.
Step 3 –Combine the flour, the baking powder, the cinnamon, and the salt in a large bowl using a whisk.
Step 4 –In a small bowl, whisk the sugar, the egg, the sour cream, the butter, the milk, and the vanilla.
Step 5 –Add the chopped strawberries to the flour mixture, tossing to combine.
Step 6 –Make a well in the dry ingredient mixture.
Step 7 –Add the wet ingredients to the well and stir until just moistened, being careful not to overmix.
Step 8 –Divide the muffin batter into the 12 prepared muffin wells.
Step 9 –Bake until a toothpick inserted into the center comes out clean, about 18-22 minutes.
Step 10 –Allow the muffins to cool in the pan for 1 minute.
Step 11 –Transfer the muffins to a baking rack to cool completely.
Step 12 –Serve.
