Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 lime, juiced
  • 3 cloves garlic, minced
  • 1 medium cauliflower, cut into florets
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 teaspoon cilantro, optional, chopped, for garnish

Directions

Step 1 -Preheat the oven temperature to 425 degrees F.

Step 2 -Whisk the olive oil, the sweet chili sauce, the sriracha, the lime juice, and the garlic together in a large mixing bowl.

Step 3 -Toss the cauliflower in the sauce mixture until well-coated.

Step 4 -Spread the cauliflower on a large baking sheet and season with the salt and the pepper. Roast in the oven until lightly golden and fully-cooked, about 30-35 minutes. Optionally, for cooking in an air fryer, place 1/3 of the coated cauliflower in a single layer in the basket of the air fryer. Cook at 360 degrees F for 12 minutes, tossing halfway through. Repeat until all of the cauliflower is cooked.

Step 5 -Garnish with the cilantro and serve.
