Birthday Muffins

Ingredients

  • 3 bananas, very ripe
  • 2 large eggs
  • 1 (15.25-ounce) box confetti cake mix
  • 3 tablespoons colorful sprinkles

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease mini muffin tins. The recipe should make about 48 mini muffins.

Step 3 –Place the bananas and the eggs in a large mixing bowl.

Step 4 –Beat the bananas and the eggs together with an electric mixer until no large lumps remain.

Step 5 –Add the cake mix to the banana mixture and mix until fully combined.

Step 6 –Spoon the batter into the prepared muffin tins, filling each cup about 3/4 of the way.

Step 7 –Top the batter with the sprinkles.

Step 8 –Bake the muffins until a toothpick inserted into the center comes up clean, about 10-12 minutes.

Step 9 –Allow the muffins to cool slightly before transferring them to a plate.

Step 10 –Serve.
