Breakfast Crack Bites

You’ve seen these little eggy treats around, and you won’t believe how easy they are to make at home! Breakfast Crack Bites are ready in less than half an hour and loads all those fluffy eggs with succulent bacon bits, smoky Gruyère cheese, and savory chives! You can grab them for a to-go breakfast or sit back and let those flavors wash over you. Breakfast Crack Bites are energizing and relaxing; they’re game for whatever day you have planned!

Ingredients

  • 1 pound bacon, cooked and chopped, bacon grease reserved
  • 18 large eggs
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 1/3 cup shallots, minced
  • 3 tablespoons chives, chopped, plus more, to taste, for garnish
  • 6 ounces Gruyère cheese, finely grated
  • 1 teaspoon Creole seasoning

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Brush the reserved bacon grease on the inside of each of the cups of a 12-cup muffin tin.

Step 3 –In a large mixing bowl, crack the eggs and whisk them together until fully combined.

Step 4 –Stir in the melted butter, the shallots, 3 tablespoons of the chives, the Gruyère cheese, and the Creole seasoning until well-combined.

Step 5 –Spoon the egg mixture into the cups of the prepared muffin tin, stirring in between to keep the add-ins evenly distributed and filling each cup about 3/4 of the way full.

Step 6 –Evenly add the cooked bacon pieces to each egg mixture in the muffin tin.

Step 7 –Using a fork, gently push the bacon around in each egg mixture to gently incorporate it.

Step 8 –Bake until the edges of each egg mixture are golden-brown, about 15-20 minutes.

Step 9 –Allow the egg bites to cool for 5 minutes.

Step 10 –Serve garnished with the extra chives.
