Cackalacky Crack Chicken

“Cackalacky” has a few different meanings, but in the case of Cackalacky Crack Chicken, we’re going with the definition of “something messy, sticky, or gooey.” And we mean that in the best of ways! Enjoy it for yourself as you bite into these chicken breasts that are coated in a tangy, ranch-seasoned mayonnaise sauce and some garlicky bacon bits. Sprinkled with even more bacon and some melted cheese, Cackalacky Crack Chicken is the messiest, gooiest masterpiece the dictionary could never adequately define! Taste and see!

Ingredients

  • 1 1/2 cups packaged bacon bits
  • 3 cloves garlic, minced
  • 1/8 teaspoon salt
  • 1/3 cup mayonnaise
  • 1 tablespoon ranch seasoning
  • 4 large chicken breasts, boneless and skinless
  • 1 cup cheddar cheese, shredded
  • 6 slices bacon, cooked and chopped
  • parsley, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Line a baking sheet with foil.

Step 3 –In a food processor, add the bacon bits, the garlic, and the salt and pulse until they are chopped into small pieces.

Step 4 –Pour the garlic mixture into a large bowl.

Step 5 –In a medium bowl, add the mayonnaise and mix in the ranch seasoning.

Step 6 –Dip each of the chicken breasts into the mayo mixture, then roll them in the garlic mixture until they are well-coated.

Step 7 –Place each of the coated chicken breasts on the prepared baking sheet and sprinkle them with the cheese and the cooked bacon pieces.

Step 8 –Bake the coated chicken breasts until they reach an internal temperature of 165 degrees F and the juices run clear, about 10-15 minutes.

Step 9 –Serve the chicken breasts garnished with the parsley.
