Sometimes just having the energy to get through a busy day is worth celebrating! Celebration Energy Bites pack a lot of fuel in adorable, sprinkle-coated spheres of sweetness thanks to a creamy combination of cashew-butter and flaxseed meal. Because of the colorful sprinkles and vanilla flavoring, each bite of recharging refreshment tastes like a birthday cake, which is worth celebrating all on its own! Celebration Energy Bites don’t even need an oven to come together: just a little prep work before they’re cool and ready to take on the day with you! Break out the streamers and balloons, because it is going to be a good day!

Ingredients

  • 1/2 cup cashew butter
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/3 cup packed fine blanched almond flour
  • 1/4 cup flaxseed meal, plus more as needed
  • 2 tablespoons sprinkles, plus more for optional rolling

Directions

Step 1 –Line a baking sheet with parchment paper.

Step 2 –Add the cashew butter, maple syrup, vanilla extract, and almond extract to a medium bowl, mixing until well-combined and smooth.

Step 3 –Add in the almond flour and the flaxseed meal, mixing well until it is combined and a dough begins to form. If the dough seems too wet, add up to 1 tablespoon more of the almond flour or the flaxseed.

Step 4 –Fold in the sprinkles.

Step 5 –Using a medium cookie scoop, roll the dough into 8 balls.

Step 6 –Roll the balls in the remaining sprinkles.

Step 7 –Place the balls on the prepared baking sheet.

Step 8 –Place the baking sheet in the freezer for at least 30 minutes.

Step 9 –Let the balls sit at room temperature for at least 5 minutes before serving.
