Ingredients

For the almonds:

  • 2 teaspoons butter
  • 3/4 cup almonds, sliced
  • 1 tablespoon sugar

For the dressing:

  • 1/4 cup canola oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons brown sugar

For the salad:

  • 8 cups leaf lettuce, torn
  • 1 medium sweet red pepper, chopped
  • 1 medium sweet yellow pepper, chopped
  • 2 green onions, chopped
  • 1 (3-ounce) can of crispy rice noodles
  • 1/3 cup sunflower kernels

Directions

Step 1 –In a small heavy skillet, melt the butter.

Step 2 –Add the almonds and cook over medium heat until toasted, about 4 minutes.

Step 3 –Sprinkle the almonds with sugar.

Step 4 –Cook the almonds, stirring, until the sugar is melted, for about 2-3 minutes.

Step 5 –Spread the almonds on foil to cool.

Step 6 –In a small bowl, whisk the oil, vinegar, and brown sugar.

Step 7 –Chill the dressing until ready to serve.

Step 8 –In a large bowl combine the lettuce, red pepper, yellow pepper, and green onions.

Step 9 –Add the dressing to the salad, tossing to coat.

Step 10 –Sprinkle the salad with rice noodles, sunflower kernels, and almonds.
