Cornbread Taco Pie

The fluffy, golden-sweet, and cheesy topping of Cornbread Taco Pie blankets a savory filling dancing with Mexican spices and flavors. If that doesn’t get you excited for dinner, we don’t know what will! Cornbread Taco Pie is bursting at the seams with juicy beef and a rich, creamy sauce with just the right amount of heat. Dinner will certainly never feel dull again!

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 4 ounces cream cheese
  • 1 can corn, drained
  • 1 (8.5-ounce) box cornbread mix
  • 1 egg, for the cornbread (or adjust according to package directions)
  • 1/3 cup milk, for the cornbread (or adjust according to package directions)
  • 1/2 cup cheese, shredded
  • 1 tablespoon cilantro, optional, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a pie dish.

Step 3 –In a large skillet over medium heat on the stove-top, add the beef. Cook until no longer pink.

Step 4 –Drain the fat from the bottom of the skillet.

Step 5 –Add the taco seasoning, salsa, and cream cheese to the beef in the skillet.

Step 6 –Cook until the cream cheese is melted and all ingredients are well combined.

Step 7 –Pour the beef mixture into the greased pie pan.

Step 8 –Top the beef mixture with the corn.

Step 9 –Mix the cornbread with the egg and milk, following package directions, but do not bake. Pour the batter on top of the pie.

Step 10 –Top with the shredded cheese.

Step 11 –Bake the pie until the cornbread is cooked through, 20-25 minutes.

Step 12 –Garnish with cilantro and serve!
